Hiking Snacks Recipe
Let me just start this post by saying - I love granola. Crunchy, sweet, carby goodness, and super easy to make (thank goodness, because store bought gets expensive really quick). Granola can be a great option for hiking and backcountry trips because it’ll provide quick energy, packs up light enough, and can be a cheap(er) alternative to other hiking foods. Not to mention, what Mountain Chicks doesn’t love some homemade goodness while away from home?

This granola won’t be super clumpy like store bought granolas, but each bite will still pack a flavour-filled punch. This recipe is veggie friendly, but if you want to go the vegan route, I suggest using agave as your sweetener (keep your sugar sticky!) I’ve included some of my favourite add ins below, but feel free to experiment (and then let me know about said experiments because I’m always on the hunt for new combos)! Scroll down, and get cooking:

Prep time: Pretty darn quick
Cook time: ~40 minutes

Ingredients:
  • 3 c oats
  • 1 c chopped almonds
  • 1 c raw, unsalted sunflower seeds
  • ⅓ c flax or chia seeds
  • 1 c raisins
  • 1 c (or more) coconut
  • 3 tbsp coconut oil
  • 3 tbsp honey (or agave)
  • 3 tbsp tahini

Method:
  1. Turn your oven on to 300F and line a baking tray with parchment paper
  2. Combine your coconut oil and tahini in a bowl. Melt in microwave in small increments, stirring until combined.
  3. Add honey (but don’t microwave!) until all wet components combined.
  4. Combine oats, almonds, and seeds into a large bowl. Pour in wet mixture and mix well. Place mixture onto baking sheet, and place into the oven.
  5. Bake for 30-40 minutes, checking occasionally and stirring once or twice. Let cool completely before adding raisins and coconut (I wouldn’t add them for the cooking process - I’ve found that they’re quick to burn). 
  6. Resist munching it all because it’s so dang delicious!
